225 g Udon noodles
1 EL Sesame oil (divided)
3 EL Soy sauce (low sodium)
1/2 cup Vegetable broth
1 cup Chicken breast (sliced)
1 cup Bell pepper (sliced)
1 cup Carrots (julienne)
2 Green onions (chopped)
2 Garlic cloves (chopped)
Instructions
Cook udon noodles according to package instructions. Drain, rinse briefly with cold water, and mix with 1/2 EL sesame oil to prevent sticking.
Slice chicken breast into bite-sized pieces and marinate with 1/2 EL sesame oil and 1.5 EL soy sauce.
Slice bell pepper and julienne carrots. Finely chop garlic. Divide green onions: use the white part for stir-frying and the green part for garnish.
Mix the remaining 1.5 EL soy sauce with vegetable broth in a small bowl.
Heat 1 EL oil in a wok or deep frying pan over medium-high heat. Stir-fry the marinated chicken until golden brown. Remove from the wok and set aside.
Add garlic and the white part of the green onions to the wok and sauté for about 30 seconds. Add bell pepper and carrots, and stir-fry for 2-3 minutes until slightly softened but still crisp.
Add the prepared udon noodles and the sautéed chicken to the vegetables in the wok. Pour the mixed sauce over the top.
Mix everything well and stir-fry for 2-3 minutes until the noodles are hot and the sauce slightly thickens and coats the ingredients. Taste and adjust seasoning if necessary.
Serve the Yaki Udon immediately on plates and garnish with the green part of the green onions. Optionally sprinkle with toasted sesame seeds.
